Integral mold bread with seeds

We can all make bread at home, all you need is a lot of enthusiasm and a little patience.

Start with basic recipes that do not need much kneading or sourdough. You will see that little by little you will get hooked and want to know more and make more elaborate recipes.

All the ingredients for this integral bread are basic, you will get them in any supermarket, this time I used the wholemeal flour and the mix pack of 4 ecological seeds of Comeztier.

Ingredients:

140 grs. From mineral water
140 grs. of milk (and 2 tablespoons more to paint the dough)
30 grs. fresh pressed yeast
25 grs. of honey
20 grs. of sunflower oil
40 grs. of nuts (and 6 more whole to decorate)
15 grs. of wheat bran
35 grs. of varied seeds of comeztier (and 1 tbsp more to decorate)
400 grs. of whole wheat flour comeztier
2 teaspoons of salt

Preparation:

  1. Put the water and milk in a large bowl and heat in the microwave for 15 sec. so that the mixture is warm.
  2. Add the yeast by undoing it with your hands and with a fork or a wire whisk mix the yeast with water and milk until it dissolves.

 

3. Add honey and oil and beat lightly.

4. Pour the chopped nuts.

5. Now add the bran, the mixture of seeds, flour and salt, mix it well with the fork and then knead with your hands until the mixture starts to take consistency *.

6. Leave the dough in the same bowl, cover it with a cloth and let it rest for about 1 hour. Until he has doubled his volume.

7. After this time spread a little flour on the counter, pour the dough and kneaded a little and give the elongated shape.

8. Take an elongated cake mold and sprinkle it with sunflower oil, sprinkle it with a little flour and spread the dough inside. Paint the dough on top with milk, sprinkle with the seeds and place the nuts on top. Cover again with a cloth and let it sit for another hour or until it doubles its volume.

9. Preheat the oven to 180º.

10. Introduce the mold with the dough in the oven * and bake 40 min. Remove it from the oven, put it on a rack until it is warm, then unmold and let it cool completely on the rack.

Preparation with thermomix

With the thermomix, making bread is much easier because it kneaded for you, although kneading by hand has its charm

  1. Pour the water and milk into the glass and heat 2 min. / 37º / vel. 1.
  2. Add the shredded yeast and mix 3 sec. / vel. 1.
  3. Add honey and oil and mix 3 sec. / vel. 1.
  4. Add the nuts and crush 3 sec. / vel. 7
  5. Add the bran, the mixture of seeds, the wholemeal flour and the salt and mix 20 sec. / vel. 6. Then knead 3 min. / closed glass / vel. Spike. Let the dough rest in the glass for 1 h. approx. or until you have doubled its volume.
  6. After this time spread a little flour on the counter, pour the dough and kneaded a little and give the elongated shape
  7. Take an elongated cake mold and sprinkle it with sunflower oil, sprinkle it with a little flour and spread the dough inside. Paint the dough on top with milk, sprinkle with the seeds and place the nuts on top. Cover again with a cloth and let it sit for another hour or until it doubles its volume.
